The agri-food sector, which today represents one of the main Italian industries from a strategic point of view, has a huge negative impact on the environment. Hence the need to implement a concrete sustainability of food resources in order to guarantee the correct quality and quantity of food to all the inhabitants of the Earth by reducing waste, promoting more responsible food consumption and optimizing production processes both from an environmental and social point of view. In this, technological innovation, starting with artificial intelligence and then blockchain, combined with accountability in behavior, can help implement forms of prevention and contrast to food waste by optimizing production and distribution, monitoring stocks in real time, preventing losses and enhancing waste. The potential of Artificial Intelligence in the fight against food waste is considerable and today it represents not only a technological advance, but also an important step towards achieving the goals dictated by Sustainable Development.
