The paper aims to reconstruct the Neapolitan aristocracy’s behaviour towards the food during the Early modern age. Just when the ideology of the aristocratic exclusivism was growing up through the elaboration of codes of refined behaviours in order to exalt the identity of class, the nobility underlined instead the sharing of the local alimentary tastes, as appears through the pages of the G. B. del Tufo’s literary work. The meats represent par excellence the food of the aristocratic tables, but with no prejudice or contempt towards the economic food of the other Neapolitans. The exaltation of the local foods was indeed very functional to the exaltation of their country in order to underline the superiority of the Neapolitan nobility compared to the other aristocracies. It was only afterwards, between the 17th and 18th century, that the city nobility looked for forms of social distinction in the food, but not in the taste, that broadly stayed shared with the other social classes, as well as in the patterns of consumption.
Si intende in questo saggio ricostruire il comportamento assunto dall’aristocrazia napoletana nel corso dell’età moderna nei confronti del cibo. Allorquando si stava costruendo l’ideologia dell’esclusivismo aristocratico attraverso l’elaborazione di codici di raffinati comportamenti volti a esaltare l’identità di ceto, la nobiltà evidenziava invece la condivisione dei gusti alimentari locali, come appare attraverso la lettura dell’opera di G. B. del Tufo. Le carni in abbondanza rappresentano il cibo per eccellenza delle mense dei nobili, ma senza alcuna inflessione di disprezzo per il cibo economico dei tanti altri napoletani. L’esaltazione degli alimenti locale era d’altra parte funzionale all’esaltazione della propria terra, per evidenziare la superiorità della nobiltà napoletana rispetto alle altre aristocrazie. Fu solo successivamente, tra il XVII XVIII secolo, che la nobiltà cittadina cercherà forme di distinzione sociale nel cibo, non però nel gusto, che restò ampiamente condiviso con le altre classi sociali, quanto nei modi del consumo.
