In the present paper a computational fluid dynamics (CFD) approach is used to simulate the pasta extrusion process. The obtained results show how the model, able to handle some of the critical issues like the geometry of the device, can help in optimizing the process parameters, and furthermore is potentially able to supply useful information for design purposes.

Abstract
